MIDI is a new feature of the V2 Docking Station. So far, only the Amiga core on V2 Chameleon hardware supports it - try Bars n pipes. The C64 core will get it's MIDI support in one of the next releases. Not sure about the status of the PC core - check the separete thread in this forum.

I see that the Turbo Chamaleon V2 Docking Station is Out of Stock, is there a timeline of when it will be back in stock?

It'll be later today - they passed QC already and have been packed yesterday, now they only need to be booked into the system. Just monitor the shop page.
